What is Kombucha?
Kombucha is a fermented tea, and have the same health benefits as tea on top of having the additional benefits from its probiotics. It contains antioxidants that reduce risk of cancer, can kill harmful bacteria via acetic acid and may help fight several diseases.
It’s made by adding specific strains of bacteria, yeast and sugar to black or green tea, then ferment for a week or more. Bacteria and yeast will form a layer on the surface of the tea, and this living symbiotic colony is what people call “SCOBY”, which can be used to ferment new kombucha. Probiotics provide your gut with healthy bacteria. These bacteria can improve many aspects of health, including digestion, inflammation and even weight loss
During the process, it also produces acetic acid, which like vinegar, and trace levels of alcohol. One might also find kombucha to be fizzy. Kombucha gets carbonated during secondary fermentation, which is when you flavor the kombucha, bottle it, and then leave it out to ferment for another round. Bacteria in the kombucha gets re-activated by the sugar in the flavorings and release gas.
